In a bowl, add:
- 1 2/3 cup of zucchini noodles
- 1 chopped cucumber
- 16 oz of cherry tomatoes
- 1/2 of a sliced red onion
Toss & add the dressing!
Dressing recipe:
- 8 tbsp of extra virgin olive oil
- 2 tbsp of apple cider vinegar
- 1/2 tbsp of dijon mustard
- 1 scoop of our Healthy Beets+
- 1/4 tsp salt (or to taste)
- 1/4 tsp pepper (or to taste)
