Gluten Free Lemon Bars

When life gives you lemons, start baking!

Ingredients

For the crust:

  • 11/2 cups super fine almond flour
  • 2 tbsp melted coconut oil
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1/8 tsp salt

For the filling:

  • 4 large eggs
  • ½ cup lemon juice
  • ½ cup honey
  • 4 tsp coconut flour

Icing sugar for garnish.

Directions

  1. Preheat oven to 350 and line an 8×8 cake pan with parchment paper.
  2. Mix all crust ingredients into a ball and place into the pan spreading to the edges. Bake for 10 minutes.
  3. In a medium-size bowl whisk the filling ingredients. Whisk until there are no lumps. When crust is ready, pour on filling and back for 18-20 minutes. Let rest for 10 minutes and chill for two hours.
  4. Sprinkle with icing sugar.
