Banana Bread is out, and Apple Bread is in! Okay, okay, maybe Banana Bread isn’t out… BUT, if you’re looking for a fall-inspired switch up, this recipe is for you! 

This Apple Loaf is moist and holds its own as a quick breakfast or a yummy dessert – with a scoop of ice cream, of course. The best part? It’s packed with easy-to-digest Collagen Peptides that you won’t be able to taste! 

INSTRUCTIONS

Preheat your oven to 375°F

In a bowl, combine your dry ingredients:

• 1 cup oat flour

• 1 scoop Purely Inspired Collagen Peptides

• 1 TSP baking powder

• 1½ TSP baking soda

• 1/2 cup brown sugar (I used a Brown Sugar Alternative)

• 1/2 cup almond flour

• 1 TSP cinnamon

• 1 TSP apple pie spice

Mix until combined, then add your wet ingredients:

• 3 eggs

• 1/3 cup light oil

Fold in 1 finely chopped apple (I used Honey Crisp!)

Then bake for 35-40 minutes. Let cool before cutting into the loaf. 

Enjoy this Collagen Apple Loaf for breakfast with a nice cup of joe, or serve warm with your favorite whipped topping or vanilla ice cream!
